W San Francisco Executive Chef Paul Piscopo Welcomes Hapa SF Food Truck Chef William Pilz to Participate in Side-by-Side Culinary Collaboration at TRACE Restaurant, September 13


SAN FRANCISCO (August 29, 2012) – W San Francisco’s TRACE restaurant, which celebrates its one-year anniversary as W Hotels’ new concept restaurant, is pleased to announce a special dinner event with Bay Area food truck chef William Pilz of Hapa SF on Thursday, September 13.  W San Francisco Executive Chef Paul Piscopo welcomes Pilz to his kitchen at TRACE to collaborate on a seasonally inspired, four-course dinner that fuses California and Filipino influences in flavor, technique and ingredients.


The evening begins at 7 p.m. outside W San Francisco on Hunt Lane, where the Hapa SF food truck will be parked, offering specialty beverages and canapés crafted by both chefs.  Guests can expect to enjoy items such as a “Sinigang Shot” – Sweet and Sour Star Anise Spiked Vegetable Broth with Sungold Tomatoes; Charred Eggplant with Crispy Rice; Sweet Potato and Rock Shrimp Fritters; and Lamb Meatballs with Olive Relish and Romesco, among other small bites.


At 7:30 p.m., guests are welcomed into TRACE for a seated dinner featuring four family-style courses, two from each chef.  Palate pleasers include Salted Duck Eggs with Heirloom Tomato, Country Line Greens and Calamansi Vinaigrette; Grilled California Yellowtail with Avocado, Radish and Pickled Cucumber; Filipino Marinated Bone-In Shortrib with Garlic Fried Rice and Pinakbet; and Ube Ice Cream with Banana and Leche Flan Turon, Stewed Mango and Almond Crunch.


Piscopo, who served as Executive Chef of W San Francisco’s previous concept restaurant, XYZ, and launched TRACE in September 2011, began his professional career at Aqua in San Francisco.  Then he moved on to Oliveto in Oakland before teaming up with renowned chef Ron Siegel at Charles Nob Hill.  At TRACE, Piscopo and his team are committed to creating an enriching and thoughtful culinary experience by combining the vibrant, local personality of the Bay Area with a dedication to socially responsible food.
